this was our dinner last night:
i realized how hard it is to take pictures of food!
here's the recipe:
- 2 c jasmine rice, cooked
- 1/4 c flour
- 1/4 tsp cumin
- 1/4 tsp coriander
- 1 pound boneless, skinless chicken breast, cubed
- 2 tsp olive oil
- 4 c mixed salad greens, or more
- 2 mangoes, cubed
combine flour, cumin, coriander and chicken in a large zip-lock bag. seal and shake to coat chicken. heat oil in a large skillet, add chicken to skillet and saute until done.
curried ginger dressing:
- 1/4 c fat free mayonaisse
- 1/4 c peanut butter
- 1/4 c orange juice concentrate
- 1/4 c honey
- 1/2 tsp ground ginger
- 1/2 tsp curry powder
whisk all ingredients in a small bowl.
divide lettuce, rice, chicken and mango among 4 plates. top each serving with curried ginger dressing.
so easy, but very tasty. nom!
